Eggs (whites) - 3 pcs.

powdered sugar - 3 tbsp. l.
nuts - 100 gr.
flour - 2 tbsp. l.
sugar - 4 tbsp. l.
vanilla sugar - 1 sachet (can be replaced with your favorite essence)
raisins - 40-50 g (possible without them)
To make protein nut and raisin cookies, you will need:
1. Prepare all required ingredients.
2. Weigh 100 grams of any nuts. It is desirable that among them there are hazelnuts (I had hazelnuts and cashews). Pour them into a chopper and chop them into medium sizes, neither finely nor coarsely.
3. Transfer the chopped nuts to a bowl. Add granulated sugar to the nuts, then flour and vanilla sugar. Mix everything well and thoroughly.
4. Separately, separate the whites from three fairly large eggs into a deep bowl. Let's add a little salt. We begin to beat the whites with a mixer. As soon as foam begins to appear, gradually and little by little add powdered sugar, without ceasing to beat the whites with a mixer. Then we increase the speed and beat until smooth and stable peaks.
5. Pour the nut part into the resulting whipped whites. Mix carefully, from bottom to top, so that the protein mass does not settle. If desired, add washed and dried raisins (we cook without them for the first time).
6. Cover a baking sheet with parchment paper and add a tablespoon protein mass one by one. Leave a distance of approximately 1 centimeter between them.
7. Preheat the oven to 120-130 degrees and place the baking sheet in the oven for 1 hour 30 minutes. This will allow our cookies to dry and cook.
8. After the specified time, we take our finished protein cookies out of the oven. Let them cool on the parchment. You will hear a pleasant, light crunch and crackle, don’t be alarmed), this is how they cool down.
This step by step recipe I tried to make the dessert more than affordable so that you can repeat it without problems at home. It should be noted that most meringue cookies are prepared with the addition of powdered sugar, not granulated sugar. The fact is that the powder dissolves much faster in the protein, so the meringue (the base for meringue) is whipped faster.
However, I can assure you that you will also succeed with sugar, you will just beat longer (if you have a planetary mixer, this is not a problem at all) so that the sweet crystals are completely dissolved. But for the first time, still take the same amount of powdered sugar, and then fill your hand and cook with granulated sugar.

That is, the finished mass should turn out airy, smooth, homogeneous and at the same time thick enough to hold its shape (I will show you this in step-by-step photos). How to pipe meringue is a personal matter: you can use a cooking bag with attachments or just a spoon. By the way, my whites were frozen and then simply thawed overnight in the refrigerator. I often cook with egg yolks, so I simply collect the whites in a bag and store them in the freezer. There is no difference between fresh and frozen meringue egg whites.
So, in addition to the products, we will need suitable dishes and a mixer. Take a bowl, wash it and dry it thoroughly. They also advise degreasing it lemon juice, and then wipe thoroughly again. Pour in the cold egg whites and add a pinch of salt.
Begin beating the egg whites at low speed, gradually increasing the speed to medium. When the whites begin to foam and become airy, add lemon juice. Ideally, we don’t interrupt the beating (I do this solely to capture the shot).
We continue to beat at almost maximum speed for another minute or two. While whipping, add sugar or powder one tablespoon at a time. Increase the mixer speed to maximum and beat the meringue, not forgetting about the sugar. If you use a planetary mixer, it will be much easier because your hands are free. Using a hand mixer, beat the egg whites as if drawing a figure eight or an infinity sign. This is necessary so that the mass is whipped evenly.
In general, it will take you about 10-15 minutes to beat the egg whites. When the sugar is completely dissolved, the mass will be as it should be.

That's all - wonderful and healthy cookies are ready. The recipe is very simple, and the preparation itself will take no more than 20-30 minutes. The main thing is to buy everything in advance.
