When it comes to Italian cuisine, the first thing that comes to mind for the average person is pizza and pasta. Cooks, in this regard, have a broader outlook, and therefore they certainly remember one more dish, a variation of which we will prepare today - pita lasagna with chicken. This free interpretation of the famous dish eliminates the most unpleasant step - making and preparing sheets of dough, and therefore is suitable even for intermediate cooks.

How to cook pita lasagna with chicken
Before we begin describing the cooking process, let's make a small remark. In stores you can find a large number of varieties of pita bread, which differ in size and number of sheets.
On average, one standard-sized lasagna takes from 1 to 2 packages of pita bread, but the number of sheets varies depending on the size of the mold and its height. That is why we recommend purchasing this product with a small supply - you can always use the excess to prepare other dishes.
Preparing the filling for Italian lasagna
- Making minced chicken for lasagna
If you want a fattier dish, then use meat from the drumsticks and thighs. For a more dietary dish, it is better to take sirloin.
- Peel the onion and chop it into the smallest cubes, also peel the carrots and grate them on a medium grater.
- Pour the oil into the frying pan and begin to fry the vegetables over low heat until the onion is golden brown.
- We also add our minced meat here. We constantly knead it with a spatula to crush the pieces as much as possible.
- Grind the canned tomatoes with a blender and also pour this mass into the frying pan. Add tomato paste here and mix everything well.
- Salt and add seasonings, knead again and set aside for a while.
Making creamy sauce for lasagna
- Heat the butter in a small saucepan over low heat.
- Slowly add flour, stirring constantly to form flour crumbs.
- Gently pour in the milk here and stir everything without interruption. Lumps are not allowed in the sauce, so we carefully monitor its uniformity.
- When the mixture thickens and begins to boil a little, turn off the heat and add a little salt.
- Grate the mozzarella on a coarse grater.
Assembling lasagna from pita bread and filling
- Grease the bottom of the baking dish with a small amount of bechamel sauce, then place a layer of pita bread the size of the bottom of the pan.
- We spread the meat filling, sprinkle with cheese, pour a little sauce on it and put the pita bread again.
- We repeat all this until the filling runs out. The last layer is lavash, which we spread with the rest of the sauce and sprinkle with cheese.
- Place the pan in the oven, preheated to 180 degrees. Usually 15 minutes is enough for baking, but you can focus on the degree of bakedness of the cheese.

Ingredients
- Chicken loin – 0.5 kg;
- Canned tomatoes – 600 g;
- Vegetable oil – 2-3 tbsp;
- Onion – 2 pcs.;
- Soft cream cheese – 400 g;
- Mozzarella cheese – 400 g;
- Provençal herbs – 2 tsp;
- Garlic – 2 cloves;
- Lavash – 1-2 packs;
- Salt - to taste.
How to make lasagna with chicken from pita bread
- Wash the chicken fillet, remove the cartilage and cut into small cubes.
- Peel the onion and chop it very finely. We do the same with garlic.
- Pour vegetable oil into the frying pan, fry the onions and garlic, then (after they have acquired a golden color) add the meat and add salt.
- Pour spices into the pan and add tomatoes without juice. Simmer for another 10-15 minutes, stirring constantly.
- Pour a small amount of tomato juice from a can into the baking dish. We put a sheet of pita bread here, similar to the size of the mold.
- Spread a layer of meat filling, sprinkle with mozzarella and cover with a layer of pita bread.
- Pour in a little juice, lay out soft cheese, which we cover again with pita bread.
- Repeat until there is filling, and generously sprinkle the top layer of pita bread with grated mozzarella.
- Place the pan in the oven, preheated to 180 degrees, for 30-40 minutes.
If you don’t want the cheese on top to bake too much, then cover the pan with foil, which will need to be removed 10-15 minutes before the end of baking.
Chicken lavash lasagna with mushrooms
Chicken and mushrooms - what combination of products could be tastier? In this variation of the recipe, we combine both creamy sauce and tomatoes to create a truly juicy lasagna that will literally melt in your mouth.
Ingredients
- Chicken meat – 0.9 kg;
- Lavash – 1-2 packs;
- Mushrooms – 0.4 kg;
- Tomatoes – 0.5 kg;
- Mozzarella cheese – 350 g;
- Onion – 1 pc.;
- Provençal herbs – 1-2 tsp;
- Sunflower oil - for frying;
- Salt and pepper - to taste;
- Butter – 150 g;
- Flour – 6 tbsp;
- Milk 3.2% – 1 l.
How to bake lavash lasagna with mushrooms and chicken
- We prepare the fillet as usual: wash it, remove the cartilage, then chop it quite finely.
- Peel the onion and cut into small cubes. Wash the mushrooms thoroughly and chop them into slices.
- Pour oil into the frying pan, add the onion, and after frying for a few minutes, add the meat. Fry for another 5 minutes, add the mushrooms and simmer for 20 minutes.
- Salt, pepper, add spices. Once the mushrooms are ready, set them aside for a while.
- Heat the butter in a saucepan, carefully add the flour, then pour in the milk and make a homogeneous sauce, which we turn off as soon as it boils. Season with a little pepper and salt.
- Scald the tomatoes, remove the skin and the hard middle. Turn into a liquid mass using a blender or grater.
- Grease the bottom of the mold with creamy sauce, then place pita bread according to the size of the bottom.
- We lay out some meat and mushrooms, pour in creamy sauce and again add a layer of pita bread. Repeat until the filling is gone.
- Pour the tomato mass onto the top layer of pita bread, then put the lasagna in the oven for a third of an hour and bake at 180 degrees.
- Remove, add cheese and cook for another 15-20 minutes.
This lavash lasagna with chicken is soaked with creamy sauce on the bottom, and tomato mixture on top. This feature of the arrangement of the filling allows it to avoid drying out, while the top of the dish is decorated with a crispy cheese crust.

For such lasagna, very thin pita bread is suitable; after soaking in sour cream sauce, it instantly becomes soggy and the desired effect is achieved. The bottom layer does not need to be greased with sauce so that the dish can be easily removed from the mold. But this is optional, as you like.

Heat a frying pan with vegetable oil. Lightly fry the minced meat.
Add onion and garlic. It is best to chop the onion and garlic in a blender, but you can also chop it finely. Pour in 100 ml of water or broth and simmer until the onion is soft.
Prepare the sauce. To do this, combine all the ingredients and beat lightly so that the egg is mixed evenly.
Add chopped tomatoes to the minced meat (can be replaced with diluted tomato paste), salt and spices. I added coriander and my favorite seasoning khmeli-suneli.
Add a handful of chopped bell pepper, I have it frozen. Simmer until vegetables are soft.
Finally add chopped spinach, stir and after a minute turn off the heat. The filling should remain juicy.
Lightly grease the ceramic mold with oil. It is best that the form is fireproof and nothing burns in it. If the mold is metal, you can try to make it fireproof by wrapping the bottom and edges in several layers of foil, shiny side inward.
Cut the lavash sheet to the size of the mold or slightly larger. Place the pita bread on the bottom of the mold, lightly grease it with sauce and spread the resulting filling.
Cover the meat layer with slices of Mozzarella cheese.
Place the next layer of pita bread and generously coat it with sauce again. Repeat layers until you run out of filling and cheese.
Grease the top layer with sauce, pouring it into the cracks. Place in an oven preheated to 180 degrees and bake until golden brown. Everyone's oven is different, so you should rely on your oven. My lavash lasagna with minced meat and sour cream sauce was baked for 30 minutes.
Cool the finished lasagna slightly and can be served.

- 2 tbsp. spoons of flour
- 300 ml milk
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
Lavash lasagna – recipe:
- Prepare tomato sauce. It is better to peel the tomatoes (to do this, they must first be doused with boiling water). Heat a little oil in a frying pan, throw in the cumin and other whole spices, and after a few seconds add the ground ones (except for). Then add tomatoes.

- Simmer for about 15 minutes, stirring.
- Add asafoetida, salt and sugar to taste. If the sauce is not homogeneous, use a blender. Cook for another 5 minutes and turn off the heat. The whole cloves must be removed.

- Armenian lavash - 1 package;
- homemade minced meat - 500 grams;

As you can see, the products are so simple that they don’t even require much description or explanation. Everyone already knows Armenian lavash. And everyone loves this thin flatbread. Homemade minced meat is a combination of pork and beef. The percentage is up to your taste. In general, you can use either minced pork or ground beef. The first step of preparation is to prepare the meat filling.

First, add the onion to the same frying pan and saute it until transparent. Next come the tomatoes. Stir all this well and simmer for about ten minutes until the tomatoes are completely soft. Of course, if you add other vegetables, they come before the tomatoes. And you need to fry them for a short time, stirring constantly. We also transfer the final filling mass into a separate bowl.
The third stage of preparation is preparing the sauce.
Even though this is a recipe for lazy lasagna, you can’t do without a sauce a la béchamel. Our version differs from the original bechamel recipe by the absence of nutmeg and the replacement of cream with milk. Otherwise, the preparation is not very different.
As always, the first step is to fry the flour to get rid of its smell. Fry in butter until slightly golden. You will definitely end up with lumps. So these flour lumps need to be poured with milk and dissolved in it. It is best to do this with a whisk. Just turn down the heat, pour in the milk and stand there, stirring everything with a whisk.
The fourth stage of preparation is to assemble and bake the lasagna.
There are still unprepared products left in our recipe. This is the cheese that needs to be grated. And also pita bread, which must be cut into pieces suitable for the shape. By the way, when choosing a shape, keep in mind that we need fairly high sides.
Now you can assemble our lazy lasagna. Lavash goes to the bottom, then a thin layer of minced meat, then again lavash, followed by vegetable filling, again lavash and so on until the end. The number of layers depends on the size of your mold. Top everything completely with sauce a la Bechamel, then sprinkle tightly with grated cheese. Preparation
The process of preparing lasagna from pita bread with minced meat can be divided into 3 stages: preparing the minced meat, preparing sauces (tomato and bechamel) and assembling, and then baking the lasagna. Eating delicious food is a separate, last and most enjoyable stage of this culinary act.
Fry the minced meat and finely chopped onion in olive oil until light golden brown. Break up any lumps while frying. Afterwards, add salt and pepper to taste.
For tomato sauce, wash and cut the tomatoes in half, grate them on a coarse grater (remove the peel). Grind through a sieve to remove the seeds or not, it’s up to you to decide.
Squeeze the garlic into the tomato pulp, stir and put on low heat to boil (15-30 minutes, depending on the fleshiness of the tomatoes).
For the bechamel, fry the flour in a saucepan until slightly golden brown. Reduce heat to low and add butter, stirring vigorously to avoid lumps.
Pour in the warm milk, still stirring vigorously (it’s very convenient to stir with a whisk).
Grate the cheese coarsely and cut the mozzarella into thin slices.
Prepare the lavash sheets - cut them to the size of the mold. This can be done with culinary scissors or, if you don’t have those, with ordinary scissors.
Grease the mold with butter and place a sheet of lavash.
Place a third of the tomato sauce on the pita bread and spread over the entire sheet.
Pour over half the bechamel sauce.
Top with grated cheese (use all of it).
Bake at 180 degrees for 15 minutes, covered with foil, and then for 15-20 minutes without foil.
Serve pita lasagna warm with fresh vegetables.
If you decide to make lasagna from pita bread
Make at least as much tomato sauce and bechamel as called for in the recipe to ensure a juicy rather than dry lasagna.
You can use whatever minced meat you like for the dish.
Using the same principle, you can make vegetable lasagna by replacing the minced meat with chopped fried vegetables (one or a mixture). To add some piquancy to this dish, use feta cheese instead of mozzarella.
