Or whole eggs, if you carried them from the store and some of them were crushed on the way (well, who doesn’t happen to you). Freeze! This is a great way. I recently visited my father and went with him to the farmers market. It turns out that he has long become friends with everyone and the farmer from whom he buys eggs, out of the kindness of her heart, gives him broken eggs. For free. It is impossible to sell such eggs, and this pretty grandmother is simply not able to eat so much. My father never refuses farm food. This granny advised me to freeze extra eggs. Friends, this is so convenient! Why didn't I know this before?
I googled on the Internet (there is nothing at all on this topic in Russian), looked through books, froze and thawed the eggs myself - it works! And while I was doing experiments, I remembered that Jack London described all this. Remember those stories about Smoke Belew and Shorty, the guys who were looking for gold in Alaska? One of the stories is called “Egg Trouble,” and I read it ten times as a child. To pick up a girl (or get rich, I don't remember the details), they bought several hundred frozen eggs. And then they discovered that they had been cheated - the eggs turned out to be rotten. The eggs were in shells, but if you plan to freeze them, break them - it’s much more convenient. Eggs can be stored in the freezer for a whole year! Year!!! This means that in the summer you can buy village eggs from grandmothers, freeze them and stop buying plastic eggs from poultry farms.
1. Lightly beat the eggs to break up the yolk. Be careful not to force air into the eggs. Pour into containers, close and place in the freezer. You can also pour into ice cube trays, let the eggs freeze, then transfer to a bag and return to the freezer.
2. Nothing happens to proteins when frozen. Pour the egg whites into a container and freeze.
3. If you freeze the yolks, be prepared that after defrosting they will become viscous. Gourmets spread these yolks on toast and eat them with their morning coffee (it’s really very tasty, especially if you sprinkle freshly ground black pepper on top). Or you can pour the yolks into a container, add salt or sugar so that the yolk retains its consistency, stir and freeze. For half a glass of yolks, take half a teaspoon of salt or a tablespoon of sugar. Just don't forget to label the containers! Place salty jelly in omelettes, and sweet jelly in baked goods.
It’s not easy to get used to eggs without shells right away. So remember that
- the white of one egg is about two tablespoons,
- yolk of one egg - one tablespoon,
- well, one egg is three tablespoons of volume.
How to freeze chicken eggs
When asked, the housewives answer - yes. It is recommended to store eggs even in the refrigerator for no more than four weeks.
Many people do not have time to eat them during this time and resort to freezing, which extends the life of this useful and necessary product in any kitchen.
In this form it can be stored for a long time and used for preparing various dishes, baked goods, salads, and culinary products.
To do this correctly, you need to follow a few simple recommendations:
- do not freeze old, stale food,
- To freeze whole eggs, you need to separate them from their shells.
- if you need to prepare a semi-finished egg product for making omelettes and pastries, grind the yolks and whites, add half a teaspoon of salt or sugar, depending on what you plan to cook from them,
- You can use ice containers to store melange - three tablespoons per compartment (after freezing, the cubes are removed and put into a container or storage bag),
- You can freeze whites and yolks separately from each other (whites are suitable for making confectionery, icing, sponge cake, meringue, ice cream, and yolks, for example, for frying croutons or decorating salads).
The shelf life of the frozen product is about a year.
Is it possible to freeze boiled chicken eggs?
It is possible if they are hard-boiled.
For freezing you need:
- separate the yolk, which will be frozen, since the white will lose its taste, and it is better to eat it as usual,
- put the yolks in a saucepan and add water,
- bring the water to a boil and cover with a lid,
- turn off the heat and leave the eggs in the water for another 10 minutes,
- Remove the product from the water, dry in a colander and place in a container.
Recipe for frozen eggs:
- rinse the product in water, dry it and put it in the freezer for two days,
- take them out and leave them in a warm place,
- peel the shell, separate the white from the yolk,
- fry the protein using an original mold that will prevent it from spreading in the pan,
- put cold yolk on top.
After a few minutes, the dish can be served. The frozen yolk will acquire a new unusual creamy taste that many people like.
It is worth remembering that you cannot cook food that has not been defrosted. They must be defrosted first, but not at room temperature, but in the refrigerator. This will protect them from bacteria. To defrost faster, the container can be placed under cold water.
All defrosted products must undergo heat treatment and be cooked at a temperature not lower than 70C.
Frozen beans with chicken egg - delicious recipe

- frozen green beans in a bag,
- two eggs,
- two onions,
- salt, oil.

The yolks must be carefully mixed with salt or sugar. This is done so that after defrosting the yolks do not acquire a grainy structure. For 3 yolks you need 1 pinch of salt or a couple of teaspoons of sugar.
I added salt because I plan to use the thawed yolks for savory shortcrust pastry, and if I decide to make something sweet, a pinch of salt won’t hurt. For example, you can bake pies or cookies from shortcrust pastry. Place the yolk mixture in containers, but not right under the lid, but leaving 1-2 cm on top, because When frozen, the mass will increase.

Second way. Proteins retain their consistency well after defrosting. Therefore, you don’t need to add anything extra (neither salt nor sugar) to the mass, but I added 1 tsp for 3 whites. sugar, I will use it later either for sweet dough with egg whites, or for cottage cheese casseroles, which should be obtained from defrosted protein mass and meringue.
Gently mix the whites so that no air bubbles form. Alternatively, you can pass the whites through a colander or sieve. Pour over protein mass into containers, and also not to the very top.
