Just pickling cucumbers is no longer interesting - I want to try something else. I decided to make cucumber rings in tomato sauce. You get cucumbers in tomato juice, the whole recipe is in the article with step-by-step photographs. The juice is drunk faster than we eat the cucumbers, a very tasty and simple recipe.
Recipe for cucumbers in tomatoes
First we prepare the jars, I take small 700 gram jars so that I can open and eat them at a time. You can take large, slightly overgrown cucumbers that are not suitable for pickling. Wash the cucumbers thoroughly.
We cut the cucumbers into rings and put them in jars to the top. Add peppercorns - allspice and black, you can add cloves.
Pour boiling water over the cucumbers.
Now let the cucumbers stand, and we will prepare the tomato sauce.
Preparing the filling. For this, a liter jar tomato paste dilute with 4 liters of water, add 2 tablespoons of salt and 5-6 tablespoons of sugar.
Bring the tomato sauce to a boil and remove from heat. This amount of filling yields about 12 jars - depending on the density of the cucumbers.
Our cucumbers have already warmed up, the water has cooled down - drain it and fill the jars with cucumbers almost to the top with tomatoes.
While preparing the filling, boil clean lids.
Now we need to sterilize the finished jars of cucumbers for 15 minutes.
Place them in a saucepan on a towel or cloth to prevent them from bursting, fill half of the jars with water and boil for 15 minutes (the time is counted from the boiling point of the water).
Take the finished canned food out of the water, add a teaspoon of vinegar essence to each jar and roll it up.
Then, without turning over, we wrap him up for the night with something warm (a blanket or a jacket).
All our cucumbers in tomato sauce are ready.
Note! When preparing tomato sauce, taste it with salt to your taste. If you find it too little, add a little. According to the dosage in the recipe, the tomato turns out lightly salted and sweet.

Rinse 5 kg of cucumbers (you can take either very small or overgrown ones) under running water, and then cut into round pieces half a centimeter thick.
To prepare the sauce, in a deep bowl, mix a liter of clean water and tomato paste, 3 large tablespoons of table salt (iodized salt cannot be used), 200 g of refined sugar, a glass of vegetable oil. Stir the resulting mass thoroughly, put it on the stove and let it boil for a couple of minutes.
Place the cucumber slices into the boiling sauce and pour in a glass of table vinegar. Mix and cook for five minutes.
Then quickly pour the contents of the vessel into sterile jars and roll them up with iron lids (they should also be boiled in advance). Turn the containers upside down, wrap them in a warm cloth and leave them like that until they cool completely. This product can be stored at room temperature.
Option with cinnamon
Rinse 500 g of cucumbers thoroughly and be sure to soak them for 3 hours in cold water. Cut the onion into half rings, chop a couple of cloves of garlic. Coarsely chop a couple of dill sprigs and a horseradish leaf.
Place part of the greenfinch on the bottom of a pre-sterilized glass container, then cucumber fruits, 5 allspice peas and the same amount of black pepper, onion and garlic. Place the remaining greens on top. Pour boiling water into the container, cover with a lid and wait 10 minutes.

You should take:
– tomato – 2.5 kg;
— cucumbers – 1 kg;

How to cook? After the tomatoes are washed, they are placed in boiling water for a few minutes to help remove the peel. You can make juice by grating them or grinding them in a meat grinder. The juice is boiled until it foams. To avoid any seeds, it is filtered. Then add garlic, sugar, salt, vinegar, pepper. After washing the cucumbers and, preferably, keeping them in cold water for several hours, cut them off on both sides. Then they put it in jars, leaving half the space for filling. Then fill the containers with tomato juice and let it brew for 20 minutes. Next, you need to pour the sec into a saucepan and boil. Cucumbers are soaked in cold water, kept for 2-3 hours and cut into pieces. The tomatoes are washed and passed through a meat grinder to obtain juice. - 0.5 l tomato juice;
- 1 tbsp. spoon of rock salt;
- 3 tbsp. spoons of granulated sugar;
- 1 PC. hot pepper;
- 1 head of garlic;
- horseradish leaves;
- greens: dill, parsley;
- 3 cherry leaves;
- 4 currant leaves;
- 3 cloves;
- 3 pcs. bay leaf;
- 10 pieces. black peppercorns;
— 6 pcs. allspice peas.
How to cook?
Cucumbers are placed in cold water for two hours. Spices are first placed in sterilized jars - 1/3 of them, then washed cucumbers, then spices again. In general, everything is laid in layers until the container is filled and filled with boiling water. The contents in the jars are allowed to brew for 10 minutes. Then boil the tomato and add sugar and salt. After the time has passed, the water from the cans is drained into one container and placed on the stove to boil again, pour this brine over the vegetables and leave again for 10 minutes. After the water is drained again, add ½ spoon of citric acid or one Aspirin tablet to each jar. Cucumbers are poured with tomato and rolled up with lids. And after turning it over, cover it with a warm blanket and leave it to cool. After a day, the jars with the contents can be placed in a permanent storage place, which should be cool and dark.
