I already wrote somewhere about sweet peppers, which for some reason we call Bulgarian. But, I repeat, it’s not scary.
Moreover, in salads this vegetable is used left and right and with constant success. Even the usual salts get a new “sound” if you add a little sweet pepper to them.
The homeland of bell pepper is South America. By the way, it is called “Bulgarian” only in Russia, and the origin of this name remains a mystery to this day.
Vegetable pepper, red pepper, sweet pepper, paprika - this plant has quite a lot of names, it is not related to the peppers themselves (the genus Pepper (Piper) of the Pepper family), but belongs to the nightshade family and is much closer to the same tomatoes, for example. Like tomatoes, sweet peppers came to us from South America, where wild and semi-cultivated forms are still found. It was there that many centuries ago the Indians began to cultivate the first varieties of “bell” pepper.
Talk about content useful substances and other characteristics of sweet peppers I will not. Laziness, and it’s already written everywhere.
I’ll just say what surprised me personally - not only does bell pepper have an excellent effect on the human psyche, allowing you to avoid depression, but it also turns out to be very useful for women during pregnancy, and for men, first of all, as a remedy for early baldness ! Wow, how.
Pepper is used in salads, first of all, for its excellent taste, in fact. At this moment, homeowners think less about depression and baldness.
It’s simple, it’s delicious, and this is quite enough for more than one thousand recipes for salads using bell peppers to accumulate.
I probably won’t be mistaken if I say that in our kitchen sweet peppers are used even more often than canned ones. green pea, is an indispensable ingredient for Soviet-style salads and vinaigrettes.
Salad with bell peppers and eggs
Salad ingredients:
- sweet pepper – 3 pcs.
- pickled cucumbers – 3 pcs.
- boiled eggs – 6 pcs.

- boiled carrots – 1 pc.
- pitted olives – 100 g

Salad with bell pepper and feta cheese
Salad ingredients:
- sweet pepper – 4 pods
- feta cheese – 200 g
- fresh tomatoes – 5 pcs.
- onions – 0.5 pcs.
- cucumber – 2 pcs.
- sour cream – 5 tbsp. spoons
- parsley and dill
- pepper, salt to taste
Wash the pepper and remove seeds. Cut into strips. Tomatoes and fresh cucumbers cut into slices. Divide the cheese into pieces (if it is very salty, then soak the cheese in water for 30 minutes).
Cut the onion into cubes. Mix all ingredients, adding finely chopped dill and parsley. Season with low-fat sour cream.
Salad with tongue and bell pepper
Salad ingredients:
- boiled beef tongue – 600 g
- multi-colored bell pepper – 3 pcs.
- tomato – 400 g (or cherry tomatoes)
- red Crimean onion – 1 pc.
- hard cheese – 200 g
- olive mayonnaise
- ground black pepper, salt to taste
Boil beef tongue in salted water. Let cool and cut into cubes. Also chop the tomatoes. Chop the onion and cut the bell pepper into strips.
Grate the cheese on a medium grater. Place all ingredients into a salad bowl. Season with olive mayonnaise. Mix carefully and add a little salt. Be sure to cool before serving.
Mediterranean bell pepper salad
Ingredients for Mediterranean salad:
- dry or frozen seaweed – 150 g
- cucumber – 1 pc.
- tomato – 1 pc.
- white cabbage, grated with salt – 100 g
- boiled potatoes – 1 pc.
- carrots – 1 pc.
- onions – 1 pc.
- green olives – 10-15 pcs.
- vegetable oil – 2 tbsp. spoons
- apple cider vinegar – 1 teaspoon
- garlic – 1 clove (optional)
- ground black pepper
- sugar
- salt to taste
Soak kelp (seaweed) in water for 2.5 hours. Then pour two cups of boiling water and boil for a minute. Place the cooked mixture in a colander.

Chop the white cabbage quite finely, rub it with salt. Wait until the cabbage gives juice, which then remove. Cut cucumbers, tomatoes and bell peppers into small slices.
Boil potatoes with carrots and cut into cubes. Chop the onion.
Mix all the cooked vegetables and season with olive oil mixed with apple cider vinegar. Decorate the salad with pitted olives.
Salad with bell pepper and pork
Ingredients for pork salad:
- pork – 250 g
- pickled cucumbers – 2 pcs.
- onions – 1 small onion
- sweet bell pepper – 2 pcs.
- Antonovka apples - 2 pcs.
- lime juice – 1 tbsp. spoon
- sunflower oil
- mayonnaise provencal
- salt - to taste
- dill
- cilantro
- ground black pepper - to taste
Cut the onion into rings and pour boiling water over it for 10 minutes. Cut the pork into small even pieces and fry in sunflower oil. Cut the cucumbers into slices.
Try to cut the bell peppers and apples into thin strips. Squeeze the juice from the lime and use it to moisten the apples. Lay out the salad in the following order: pork – pickles – apples – onions – mayonnaise layer – bell pepper. There is no need to cover with mayonnaise, just garnish with sprigs of fresh herbs.
I have not tried most of the “favorite recipes” presented. But the recipes are interesting.

Ingredients for 3.5 liters of salad
- 3 kg bell pepper;
- 0.5 kg of carrots and onions;
- 3-5 ripe large tomatoes;
- 3-4 tbsp. tomato paste;
- 2-3 tbsp. sunflower oil;
- 2-2.5 tbsp. salt;
- 1-2 bay leaves;
- 10-15 black peppercorns.
- Choose elastic, ripe, juicy peppers - you can have them all of one variety, but different colors are more interesting: not only the most common “Belozerka”, but also red, green, yellow, orange! The more colorful the salad, the more beautiful it will be.
- It is better to take larger onions and carrots - this makes it faster and easier to peel, cut and grate the vegetables.
- Tomatoes can be completely replaced with tomato paste - but if you have a few ripe tomatoes, why not add them to the salad. After all, fresh tomatoes are much better than tomato paste.
Making a salad with bell peppers
1. Wash all the vegetables. Clean the peppers from the tails and cores with seeds; carrots and onions - peeled. Rinse the vegetables again.
2. Prepare a capacious enameled (or stainless) pan, pour 1-2 cm of water to the bottom. If the pepper is very juicy, pour a little, during the cooking process juice will be released from the pepper. If the pepper is not very juicy, you will need a little more water.
3. Cut the peppers into strips up to 5 mm wide.
4. Pour into the pan. We put the heat on less than medium and simmer under the lid, stirring occasionally, until the pepper begins to soften - 15-20 minutes.
5. Meanwhile, prepare the remaining vegetables. Cut the onion into small pieces and sauté in heated sunflower oil until slightly soft.
6. Grate the carrots on a coarse grater and add them to the onions. After stirring, fry together for 3-4 minutes so that the carrots also become soft.
7. Grate the tomato pulp on a coarse grater, rub through a colander and add to the carrot-onion fry. Let's put it there tomato paste, stir and continue cooking for a couple more minutes.
8. It’s time to add the carrot-onion-tomato mixture to the peppers. After mixing the salad well, simmer everything together for another 7-10 minutes.
9. Then add salt, mix, and taste. If satisfied, add the rest of the spices and cook for another five minutes.
By this time, you need to have sterile jars and lids ready - it is most convenient to roll the pepper salad into 0.5 and 1 liter jars.
10. Ladle the boiling salad into jars and immediately roll it up with a key or close it with screw caps.
After checking the finished jars for leaks, turn them upside down and wrap them warm until they cool.
The resulting salad with bell peppers for the winter turns out to be extremely tasty and juicy. You can eat it either as a side dish to make it more enjoyable or as an independent snack, for example, simply spreading it on bread! Enjoy your meal!
