Preparation of pepper appetizer:
Step 1: prepare the pepper.
To prepare this wonderful appetizer, you should choose medium-sized ripe bell peppers of any color you like, but if you don’t have any, you can use regular salad peppers, although their taste is less sweet. It is advisable that they are undamaged, since the pepper does not need to be peeled. We simply thoroughly wash our vegetables under cold running water to remove sand and any other contaminants. Afterwards, dry thoroughly with paper kitchen towels to remove excess moisture and place in a deep, dry bowl.Step 2: fry the peppers.
Now turn on the stove to medium level and place a frying pan with 150 - 200 milliliters vegetable oil. You need a lot of fat so that the peppers are fried evenly on all sides and do not burn. When the oil is hot, very carefully lower the peppers into it, holding them by the tails. Fry them on all sides until light golden or dark brown, depending on what degree of frying you prefer.
There is no need to bring vegetables to full readiness at this stage of cooking; the peppercorns should remain almost raw inside, so frying will take no more than 2 – 2.5 minutes. Periodically turn the pepper from side to side using a kitchen fork and a kitchen spatula. When it turns pink, transfer the pepper to a large flat plate and let it cool to room temperature.
Step 3: prepare the garlic.
While the pepper is cooling, take 1 - 2 heads of garlic and peel them, the quantity also depends on your taste. We rinse the garlic cloves under cold running water, dry them with paper kitchen towels, place them on a cutting board and, using a knife for slicing raw vegetables, chop the garlic into thick layers up to 3 millimeters, but the thinner the better. Transfer the slices into a deep bowl.
Step 4: prepare the marinade.
Then turn on the stove to a high level and place a deep saucepan with 1 liter of clean water. When the liquid boils, reduce the temperature of the stove to a medium level and pour the required amount of salt, granulated sugar into the pan, pour in 9% table vinegar and add 2 types of black peppercorns and allspice. Boil the marinade for 2 – 3 minutes. Exactly this amount of time is needed for the spices to release their aroma and for the sugar and salt crystals to dissolve.
Then remove the pan from the stove, holding it with a kitchen towel. Cool the marinade until 38 – 40 degrees, it should become slightly warm so that you can safely dip your fingers into it without getting burned.
Step 5: stuff and marinate the peppers.
There is no need to wait until the marinade cools down; let’s start stuffing the cooled peppers. We make a small cut in each peppercorn in turn. 1 – 2 centimeters and fill them with slices of garlic in equal quantities.
Place the peppercorns in a deep enamel bowl. After a while, pour the cooled marinade over them, place a large flat plate on the pepper and place it under a press, that is, place pressure on the plate. In its form, you can use something heavy, for example a liter jar filled with ordinary running water. We place the resulting structure on 1 day in the refrigerator. After this time, the appetizer can be served.
Step 6: Serve the pepper appetizer.
The pepper appetizer is served chilled. The peppercorns are placed in a salad bowl, seasoned with vegetable oil, sprinkled with fresh chopped garlic, green onions, parsley or dill. If desired, you can remove the skin from the pepper before serving; it easily peels away from the pulp. This dish tastes like peppers kept in marinade for a long time, but it cooks ten times faster.
