The recipe is for 5 liter jars. We wash and sterilize the jars. Wash fresh cucumbers thoroughly in running water. Their quantity may vary depending on how tightly you pack them into the jar. Both small and medium-sized cucumbers are suitable. You’ll just have to cut large cucumbers into pieces so that you can pack them more tightly into the jars. For small cucumbers, just cut off the ends. Place the cucumbers very tightly in the jars.
Ingredients for preparing the marinade:
- 1.5 l. water
- 200 gr. Sahara
- 200 gr. vinegar
- 200 gr. tomato paste or sauce
- 2 tbsp. spoons of salt
- peppercorns
Preparation
Bring the marinade to a boil and pour over the cucumbers. Sterilize in the usual way for 7 minutes and roll up. I sterilize this recipe using the oven. I really don’t like messing around with boiling water. Therefore, after filling the cucumbers with marinade, I put all 5 jars in the oven. As soon as the cucumbers begin to change color, I turn it off and roll it up. As you can see, the recipe for pickled cucumbers in tomato sauce it turns out very simple. Bon appetit!
Cucumbers in tomato juice without sterilization for the winter
We pick cucumbers for preservation from the garden just before cooking. If we buy, it is clear that it is impossible to find out when they were picked, so we first soak them in ice water. We weigh it. To make three liter jars, take 1.5 kg of small cucumbers, 1.5 liters of tomato juice. When it comes to juice, you have a choice: either you use a store-bought product, or, taking a moment in advance, prepare homemade nectar from your own tomatoes.
Immediately pick three sprigs of parsley and dill, a leaf of horseradish, currants, and cherries, wash them. Take one bay leaf and an umbrella of cloves. If you prefer spicy cucumbers, take a small pod hot pepper, clove of garlic. When the vegetables and herbs are prepared, measure out 9 tablespoons of sugar and 3 of the same tablespoons of salt. It is important to use salt intended specifically for canning.
Cucumbers and greens, alternating layers, are placed in a jar, immediately add garlic and pepper, if used. Separately, bring the tomato juice to a boil, add spices, salt and sugar to the liquid, let it all simmer for about five minutes. In the meantime, you need to separately heat the water to a boil and pour the contents of the cans into it for the first time, when it has stood for a quarter of an hour, drain the liquid, trying to do everything sterile and replace it with tomato juice, cooked by this time and almost boiling, with spices.
Additionally, for each jar of cucumbers cooked in tomato juice for the winter, add an aspirin tablet, if you want, add vinegar. In general, as you like and only after that, having screwed the cans, they are turned over and wrapped. The preservation will not cool down before a day later, so we put the jars in the cellar only on the second day after preparation, or even on the third if we made a lot of jars at once! Today I offer a recipe for a preparation that not only me, but also all my family and guests really like. The main feature of the preparation is that I cook it without vinegar. The recipe is simply necessary for those people for whom vinegar is contraindicated.
Cucumbers close without it thanks to tomato paste. They store well in an apartment. They have a delicate spicy taste. You can drink the brine or make a sauce for stewing meatballs or other dishes. The recipe is very simple, even a person who spends little time in the kitchen can prepare it. My step-by-step photo recipe is at your service.
Ingredients for 1 liter jar:
- cucumbers 800 gr,
- 1 onion,
- 1 horseradish leaf
- 2 dill umbrellas,
- 2 cloves of garlic,
- 7 allspice peas,
- 2 laurel leaves
- 300 ml tomato paste or juice,
- 2 tablespoons sugar,
- 1 tablespoon salt,
- 1 teaspoon cinnamon.
How to pickle cucumbers with tomato paste and onions for the winter
Wash the cucumbers and leave them in cold water for at least 2 hours.
Peel the onions, wash and cut into rings.
Place onion sliced into rings with the rest of the spices on the bottom. Place cucumbers on top and pour boiling water over them.
Wait 10 minutes, pour the water into the pan and boil again. Pour boiling water over the cucumbers again for 10 minutes, drain the water into the sink. We won't need it anymore.
Make the marinade: add sugar, salt, and cinnamon to the tomato paste. Stir well until sugar and salt are completely dissolved and boil.
An important point: if the tomato paste is very thick, then you need to dilute it with water until it becomes liquid.
Pour the boiling marinade into a jar with cucumbers.
Cucumbers with tomato paste 20 minutes, roll up the lid. Wrap in a blanket for a day.
If there is no cellar, you can store it in an apartment.
