Diet recipes for patients with acute and chronic pancreatitis:
- Oatmeal. To prepare it, you will need three tablespoons of oatmeal, 200 milliliters of water, salt and a piece of low-fat butter. Pour the flakes with water, add a little salt and bring to a boil with constant stirring. Then turn off the heat, close the lid and leave for 5-10 minutes. When serving, a piece of butter is added.
- Milk pumpkin-rice porridge. This is a very tasty and healthy dish used for pancreatitis and icholecystitis. To prepare it, you will need half a kilogram of pumpkin, seven tablespoons of rice, 200 grams of skim milk, a piece of butter, a pinch of salt and sugar. The peeled pumpkin is cut into small pieces and filled with water so that it completely covers the pumpkin. Add sugar and salt, cook. When the pumpkin has become soft, add the rice and cook until it is ready. When the water has almost completely evaporated, pour in the milk. After it boils, turn off the fire, cover with a lid. First courses for pancreatitis

- Soup puree potato. For cooking, you will need a liter of vegetable broth, 100 grams of potatoes, one carrot, salt and onions. Second courses for pancreatitis
There is a wide variety of second courses.
With the appropriate method of preparation, such dishes can be eaten by patients suffering from pancreatic disease.
To prepare these dishes, you can use fish, chicken meat, young beef, vegetables and some other products. One of the requirements when preparing a second course for dietary nutrition is the refusal to use the frying process.
- Fish meatballs. To prepare them, the crumb of a wheat loaf should be soaked in milk. Then the fish fillet, onion and pulp are placed in a meat grinder and chopped. After that, you need to add the egg and salt. The resulting mixture must be made homogeneous. Small balls begin to roll out of it. While the balls are being formed, one and a half liters of water is put on fire and boiled. Already formed meatballs are dipped into boiling water one by one. They cook for about a quarter of an hour. A very well prepared dish goes well with baked potatoes or rice.
- Chicken soufflé. Chicken meat must be cut into small pieces and thrown into a meat grinder. Milk, egg and salt are added to the minced meat to taste and mixed. The dish must be baked, and therefore the baking dishes are smeared with sunflower oil, the fully seasoned minced meat is laid out and placed in the oven, heated to about 180 - 200 degrees. The soufflé should take about half an hour to cook.
- Baked veal. Half a kilogram of meat is washed, salted and small cuts are made on it, intended for carrot stuffing. Then the parsley is finely chopped, the carrots are cut in the form of plates and laid out in previously made cuts on the veal. The dish should be baked in a special "sleeve" for about half an hour.
- Carrot and squash puree. To do this, carrots and zucchini are boiled for half an hour over low heat. Grind boiled vegetables in a blender, add a little salt and a teaspoon of sunflower oil. To improve the taste, you can add low-fat sour cream or cream.
- Pumpkin porridge. First of all, the pumpkin needs to be peeled and cut into cubes. Then it is thrown into water and boiled over low heat for 15-20 minutes. When the pumpkin is ready, add half the amount of rice to it, add enough water so that its level is two fingers higher, and boil until the rice is ready. You can add a spoonful of honey to the finished porridge.
- Beef cutlets. You need to have about 200 grams of beef. A piece of bread, preferably stale, is soaked in water, and then, together with salted meat, is thrown into a meat grinder. Cutlets are formed from minced meat and cooked in a double boiler for an average of about half an hour.
- Steam omelet. 1-2 chicken eggs are used, in which the proteins are separated from the yolks. Proteins are poured with milk, and salt is added. The resulting mass must be thoroughly beaten and placed in a container for cooking in a slow cooker. Optionally, you can add greens and a little low-fat cheese. The dish is cooked within 15 minutes.
You can also use meatballs with broccoli. To prepare them, you need to take a fillet of any lean meat, cut into pieces of medium size. - Fruit and berry jelly. It will take a little more than two liters of water, sugar, fruits and berries (apples, plums, apricots, blackcurrants, raspberries) with a total complexity of about half a kilogram and starch. Boil sweetened water, throw fruits and berries into it and cook for about five minutes. At the same time, starch is diluted in a glass of cold water. When the fruits are cooked, they need to be removed from the heat and the starch should begin to fall asleep. This should happen gradually and very slowly, and you should constantly stir so that lumps do not form, and the jelly turns out to be homogeneous. The resulting dish should be cooked over low heat for another 3-5 minutes until fully cooked and served warm or room.
