- Vegetable oil – 25 ml + for frying.
How to cook lush pancakes with cherries on kefir
To begin, prepare a convenient bowl in which you can conveniently knead the dough. Beat one chicken egg into it, add salt and granulated sugar. The amount of the latter varies depending on how sweet the pancakes are to your liking. Mix all ingredients with a hand whisk until smooth.
Now pour in kefir at room temperature. The dairy product can have any percentage of fat content - this aspect is unimportant. Also add vegetable oil. Mix all ingredients again.
Combine flour and baking powder in a separate bowl and mix both dry ingredients well. Sift the mixture through a fine-mesh sieve. Mix the mixture again with a whisk, ensuring its homogeneity. If there are lumps in the dough, they need to be broken up.
The finished dough for fluffy pancakes has the consistency of thick sour cream - it should not quickly spread over the pan. If the desired state is not achieved, then add a little more flour. Leave the workpiece for 15-20 minutes.
At this time, start preparing the cherries. Sort through the berries, leaving only whole fruits. Fill them with water and leave for 3-5 minutes, then wash thoroughly.
Remove pits from clean cherries.
Pour some oil into the frying pan. Place it on the stove and heat it up thoroughly. Scoop the dough with a tablespoon and place it in the hot oil, shaping it into flat cakes.

3. Add the egg to the rest of the ingredients. Mix thoroughly with a whisk to form a homogeneous dough.
4. Sift the flour through a sieve and add a little to the dough. Mix with a whisk to avoid lumps.
5. Add 2 tablespoons of vegetable oil and stir until evenly distributed. The dough should have the consistency of thick sour cream.
6. Prepare fresh or frozen cherries. If the cherries are fresh, remove the stems and pits. If the cherries are frozen, defrost them at room temperature and drain the juice. Add the prepared berries to the dough. Stir.

You need to fry the pancakes in a well-heated frying pan, over high heat and a considerable amount of sunflower oil. Then they turn out lush, rosy, tender!
Pour the dough by the tablespoon into a hot frying pan with oil and wait until the pancakes are fried on one side.
You will see that it is time to flip when bubbles appear on the pancakes - this means that they are baked and have risen well.
Turn it over to the other side with a spatula and fry a little more on the other side. It will be faster than the first one, since the pancakes are almost ready.
