Step 1
The most crucial moment is to remove the skin from the fish. It is not so difficult. Pike skin is very durable, so it will not tear. First clean the fish, then wash it and remove the gills. Next, cut the skin of the fish on both sides (along the gill slit). Attention, the part of the skin that connects the dorsal part of the pike with the head must remain intact.
Step 2
Turn the pike head back a little and, using a knife (you can do it without it), remove the skin like a stocking. Cut off the cleaned meat, not reaching the tail part 3 cm. After all manipulations, the skin of the pike should remain, along with the tail and head.
Step 3
Remove the internal contents and bones (spine, ribs) from the pike. Cut the fish fillet into pieces, removing small bones as you go (you can use tweezers). Cut the crusts off the loaf, cut and soak in warm milk. Make minced fish by grinding the fillet and bread through a meat grinder, then adding 1 egg.
Step 4
Chop the garlic cloves, finely chop the greens, chop the olives into slices, add to the minced meat, season with spices, and mix.
