The cake is very easy to prepare - everyone can handle it.
There is almost no flour in it, and for the base I use oatmeal, nuts and coconut flakes.
Delicate, airy, slightly moist, juicy, moderately sweet, with a fantastic cream that is hard not to eat before the recipe is complete.
And the smell! Mmm… This is without a doubt my favorite pie of all the creations featured here! I warn you right away: it will be difficult to stop at one piece of this beautiful and tasty pie. Control yourself! Or don't you?

We will need: (1 medium pie)
For the base
1 cup (250 ml) oatmeal
3/4 cup walnuts
2/3 cup shredded coconut
1/2 cup whole grain flour
1/2 teaspoon baking powder
1/4 teaspoon soda
3/4 cup brown sugar
1.5 cups grated carrots (about 1.5-2 large carrots)
1/2 hour - 1 tbsp. cinnamon spoon
1/4 teaspoon dry ginger
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves (optional)
1/4 cup any unscented vegetable oil (I use canola oil)
3/4 cup orange juice
1 teaspoon apple cider vinegar
Coconut oil for mold (optional)
For cream
230 g (or one package) vegan or regular cream cheese
4 tbsp. tablespoons of agave syrup or honey without a bright aroma
2 tbsp. spoons of lemon juice
Preheat oven to 165C/325F.
Grind nuts, coconut, oatmeal.
We add flour.
We fall asleep sugar.
Add soda and spices.
Three carrots on a grater. Add to dry mixture and mix gently.
Mix liquid ingredients and pour into the base.
Lubricate the form (18 cm) with coconut (for a more pleasant aroma) or ordinary vegetable oil and pour our composition there. We send it to the oven.
Remove when the toothpick comes out dry, after about 40 minutes. The cake should rise. Cool it down and take it out of the mold.
We mix everything for the cream. We apply it only when our cake has completely cooled down. I repeat when the cake has cooled. You will really want to do everything quickly, because applying the cream is so fun and pleasant, and the cake smells so appetizing that you will no longer have patience, but heed my advice, otherwise your cream on a warm cake will simply flow. By the way, you can replace the cream with the cream from my recipe.
First you need to turn on the oven so that it can warm up well while the dough for the pie is being prepared. If grated carrots give a lot of juice, then you need to squeeze it thoroughly so that the cake does not get excess liquid, but carrots should not be tamped.
In a separate container, put the sifted flour, soda, salt, and cinnamon. Then, in another container, grated carrots are mixed with sugar (carrots must be grated on a fine grater), sunflower oil and yogurt.
Carrot cake without eggs is very easy to prepare. The result is a rather liquid mixture, in which you need to add flour and mix everything thoroughly. You should get a dough of the same consistency as for pancakes.
The baking dish is pre-greased with butter and lightly sprinkled with flour so that the cake does not burn. The dough is carefully poured into the mold and placed in an oven preheated to 180 degrees.
After the cake has risen, turn the heat down slightly and bake the cake for 40 minutes, until appetizing cracks appear on the surface. The readiness of the cake can also be checked with a simple toothpick - if you pierce the cake and the toothpick remains dry, then the cake is ready.
To decorate the cake, you need to prepare the glaze. A small dipper is placed on a small fire, in which butter is placed so that it melts, then sugar and milk are added.
The mixture is cooked for several minutes, while the icing must be constantly stirred until the sugar is completely dissolved. The cooled cake is poured over with prepared glaze and sprinkled with chopped walnuts on top.
The cake is the delicacy that is present on the table during feasts and celebrations. We are used to bold, richly creamy options. But for fasting people, the lean carrot cake recipe is the most suitable. These are diet pastries, beautiful, bright in appearance, healthy and very tasty. apricot jam - 200 g;
vanillin - to taste;

Cooking:
Roast the chopped walnuts in the oven.
Mix the sugar with melted butter well, pour in the juice.
Grate the vegetable. To do this, you can use a Korean carrot grater. Connect with oily liquid.
Set aside a few nuts to decorate the dish, grind the rest in a blender. Do not overdo it, it is better that large pieces are felt in baking. Transfer them to the liquid composition.
Mix flour, vanilla, baking powder, also add to the mixture. Mix thoroughly.
Grease the form with oil, pour in the dough. Put only in an oven preheated to 200 degrees. Cook for 30-40 minutes depending on your oven.
Cool the finished cake. Cut it into 2 pieces. Lubricate the bottom layer with jam, lay the second one on it. Spread jam on the sides and decorate with nuts. Sprinkle the top with powdered sugar. Carrot lean cake according to the classic recipe is ready!
With orange cream
The lean recipe for carrot cake with cream is quite simple. Baking is light, dietary, healthy. For cooking, simple products are used, which, with the right combination, allow you to get a delicious treat.
Ingredients:
large carrots - 2 pcs.;
flour - 200 g;
sugar - 150 g;
orange peel - 50 g;
soda - 1 tsp;
vinegar - 1 tsp;
orange juice - 0.5 l;
semolina - 5 tbsp. l.;
water - 0.5 tbsp.;
salt - to taste;
powdered sugar - for decoration.
Cooking:
Grate the carrot on a coarse grater, add flour, sugar (100 g), soda quenched with vinegar, citrus zest. Stir. Pour water. Knead the dough, salt a little.
Put the base of the cake in a mold, bake at 180 degrees until cooked. Next, cool, cut. From this set of products you will get about 2-4 cakes.
Prepare the cream: dissolve the remaining sugar in the juice, heat over low heat. Add semolina here, cook in the usual way. Unplug, wait until it cools down completely.
